Respect of "terroir" and authenticity of the controlled appellation of origin. I'm very committed to the AOC notion, and especially to the collective scope, without which the appellation doesn't exist anymore. I really like this citation of Fr. TRISTAN "Tradition is not a return to old-fashioned attachement to the past, but the permanence of origins in time."

It reflects my philosophy, to combine tradition and modernity; in a way to manage the vineyards as much as in the style of my wines. We are lucky to have at our disposal some unique terroirs. That is the origin! We are the guardians for the future and for the next generations... That is the endurance. For these reasons, I have installed the "reasoned" production. The use of grassy soil and management of phytosanitary treatments, and also a longer aging of the wine and a control of the use of SO2...

Vinification

After a pneumatic pressing and a selection and a clarification of juices, the wine making is completely made in oak barrels of 500 liters there from 1 to 10 years old. The fermentation takes place at low temperature in natural caves and lasts several months. A single racking is made for an aging until the bottling.

11 to 12 month in barrels.

Tasting Comments

The dress is brilliant, bright, color yellow supported in golden reflections. The nose is harmonious with smells of fruits white walls (apple, pear, banana) strengthened by smoked, grilled notes of wooded molten one. The soft mouth offers the sweetness of a greedy body and  a lot of fat. The woody dimension becomes integrated pleasantly . The association between the freshness of citrus fruits, the sweetness of the material and the minérality of the structure brings to this wine a remarkable balance. Beautiful Vouvray, supple, mineral and fruity.

Wine of patience of big complexity, a new style for  VOUVRAY wines, we learn during the elaboration of this vintage top of the range a lot, particulary  during the aging.
